THAI FISH CAKES

THAI  FISH  CAKES:
INGREDIENTS:       (serves 4 )

500  g white fish fillets, minced or chopped
1  egg, beaten
3  tbsp  fresh lime leaves, minced
2  tbsp red  curry paste
1/2  cup  string beans, very finely sliced or chopped
1  tsp  sugar
1  tsp salt
Cooking oil, for frying

METHOD:
  • Place fish in a food processor and process for 20 seconds or until smooth.
  • Add egg, lime leaves and curry paste and process for 10 seconds or until combined.
  • Transfer the mixture to a large bowl.  Add string beans, salt and sugar mix well. Using wet hands, divide the mixture into small portions and shape them into patties, about 7-8cm in diameter.
  • Heat oil in a heavy bottomed frying pan over medium heat. Cook in batches until dark golden brown on both sides.
  • Drain on paper towels and serve immediately with sweet chilli sauce or cucumber relish.
