TABOULEH WITH SMOKED SALMON

TABOULEH  WITH  SMOKED  SALMON:
INGREDIENTS:        (serves 10)

400  g  onion
400  g  tomato
200  g  borghul
200  g  mint
100  g  parsley
5  g  cinnamon powder
40  g  salt
200  ml  olive oil
50  ml  lemon juice
800  g  smoked salmon, for serving
Sour cream, for serving

METHOD:
  • Dice the onion and tomato. Soak the borghul in water for 10 minutes. Wash the mint and parsley and shred.
  • Mix all the ingredients together and season with cinnamon powder and salt. Drizzle with olive oil and lemon juice.  Mix well.
  • To serve, place tabouleh on a plate in small heaps, spoon on some sour cream and place salmon on top. Garnish with a sprig of coriander.
